Freeze-drying is a distinct process from conventional dehydration. An ube powder label alone does not identify how the ingredient was made. Require a process description and confirm that the offered material is purple yam rather than a flavoured carrier or purple sweet potato.

Make the comparison worthwhile.

Compare the candidate with a conventional pure powder at equivalent solids and in the same recipe. Assess aroma, colour, hydration, yield and texture. A more expensive process does not automatically improve every finished product.
